1. Gold and silver tofu
Ingredients: 150g tofu, 100g Oily bean curd, 20 straw mushrooms (canned), 2 onions, 100g water, 15g soup (powder), 15g soy sauce, 4g sugar, 4g onion oil, and a little starch mixed into paste.
Preparation method: cut tofu and Oily bean curd into small pieces of 2cm square, add water in the pot, add soup, tofu, straw mushroom, soy sauce, sugar, etc. after boiling, boil for about 10 minutes, add starch paste to thicken and put into a bowl, pour onion oil around, and sprinkle onion segments on the surface.
2. Walnut Tofu Balls
Ingredients: 250g tofu, 2 eggs, 50g flour, 500g salad oil, 500g broth, appropriate amounts of salt, starch, pepper, monosodium glutamate, and walnut kernels.
Method: Crush tofu with a spoon, pour in eggs, add salt, starch, soy flour, pepper, and MSG, mix well, and make 20 meatballs. Place a walnut kernel in the middle of each meatball. Heat the meatball over high heat in salad oil until it is about 50-60% hot, then fry until cooked.
3. Pipa Tofu
Ingredients: 150g tofu, 100g lean pork mince, 2 eggs, appropriate amounts of starch, salt water, cooking wine, pepper powder, monosodium glutamate, scallions, and ginger, a small amount of ham shreds and shiitake mushrooms, 100g red wine, 500g broth.
Method: Blanch tofu in boiling water and mash it into a paste. Mix with minced meat, egg juice, starch, salt water, cooking wine, pepper, and MSG until thick. Add scallions, ginger, and water and stir well. Then add a small amount of sesame oil and mix well. Use 10 spoons, each with a small amount of oil, to add tofu paste. Add shredded pork and shiitake mushrooms, steam through the pot, remove the spoons, and place the prepared tofu balls on a plate. Bring the broth to a boil, add red wine, and when it boils again, pour it over the pipa tofu.
4. Xuecai Tofu Soup
Ingredients: 200 grams of tofu, 100 grams of snow dumplings, appropriate amounts of salt, chopped green onions, MSG, and 50 grams of salad oil.
Method: Blanch the tofu in boiling water and cut it into small cubes measuring 1 cm square. Wash the snow soaked tofu and cut into cubes. Heat the wok over high heat, add chopped scallions and stir fry until fragrant. Then add an appropriate amount of water and wait for the water to boil. Add snow jerky and diced tofu, simmer over low heat for 15 minutes, and add salt and MSG before serving.
